Pickled eggplant with green ingredients
  • 1kg eggplant
  • 1.5 liters of water
  • 1 tsp salt
  • cilantro and dill (optional)


Ingredients for marinade
  • 1 liter of water
  • 2.5 tsp salt
  • 1.5 tbsp sugar
  • 3 tbsp vegetable oil
  • 4.5 tbsp 6% vinegar
  • 20 peas of black pepper
  • 3 cloves of garlic
  • pinch


Preparation
  1. Peel the eggplant off the peel and cut into small pieces.


  2. Pour boiling water, add salt and cook on an average heat of 10-15 minutes to relieve the blue from bitterness.


  3. Then drain the water and set aside the eggplant to cool off while you cook the marinade.
  4. Dilute the sugar and salt in the water. Add the spices, crushed garlic, vinegar and butter. Stir it all together.


  5. Pour the resulting eggplant marinade.


  6. Stir, cover with food film and put in the refrigerator for at least 3-4 hours.
