Pickled eggplant with green ingredients
- 1kg eggplant
- 1.5 liters of water
- 1 tsp salt
- cilantro and dill (optional)
Ingredients for marinade
- 1 liter of water
- 2.5 tsp salt
- 1.5 tbsp sugar
- 3 tbsp vegetable oil
- 4.5 tbsp 6% vinegar
- 20 peas of black pepper
- 3 cloves of garlic
- pinch
Preparation
- Peel the eggplant off the peel and cut into small pieces.
- Pour boiling water, add salt and cook on an average heat of 10-15 minutes to relieve the blue from bitterness.
- Then drain the water and set aside the eggplant to cool off while you cook the marinade.
- Dilute the sugar and salt in the water. Add the spices, crushed garlic, vinegar and butter. Stir it all together.
- Pour the resulting eggplant marinade.
- Stir, cover with food film and put in the refrigerator for at least 3-4 hours.
