  • 1 litre of fatty homemade milk
  • 1 tbsp yogurt or sour cream


Preparation
  1. Let's get some milk first. It's homemade, fatty. We all know that some irresponsible manufacturers, to reduce the cost of the product, use powdered diluted milk and put it on store shelves. That's not gonna work for us at all. Only a natural product.


  2. We pour it into a pot and boil it on a medium fire. You can bring the milk to a boil under the cover. Then remove the lid and let the milk boil for another 5 minutes. If you want a thicker matzoni, the boiling time can be increased to 10 minutes.


  3. Let the milk cool to 40 degrees and pour in a jar. Under no circumstances should the temperature be kept higher. Otherwise, the serum will definitely separate from the leaven, and the product will be spoiled. If the finger is not too hot, you can proceed to the next stage. Add a tablespoon of fatty yogurt to the milk.

  4. Now we close the jar with a lid and carefully, without shaking again, cover with something like a warm blanket. The bottom line is simple: you need to make the matzoni cool as slowly as possible. Wait 5 hours and get the jar out. The drink isn't ready yet. Send it to the fridge for 12 hours and only after that you will get tasty, thick matzons with a very pleasant taste and texture.




Now you can consume this wonderful dairy product directly from the can. And if you want, make a few spoonfuls of cold water matzoni in a glass. Embed and get homemade, natural kefir.
