Recipe for a pumpkin and manka pie

Mannicus on kefir in oven Ingredients
  • 300g grated pumpkin
  • 1 lemon
  • 250ml kefir
  • 300g sugar
  • 270g semolina
  • 2 tsp baking powder
  • 120 ml of water


Preparation
  1. Pumpkin sod on a fine grater or grind with a blender. Add kefir, 100g of sugar, manca, baking powder and peel of one lemon. Thoroughly and quickly mix all the ingredients so that semolina does not have time to swell.


  2. Heat the oven to 180 degrees (it is advisable to do this at the stage of mixing ingredients), lubricate the form with butter or vegetable oil, shift the dough into the form, evenly spreading it, and send it to bake for 40-45 minutes.


  3. While the cake is baked, prepare the impregnation. Mix the remaining sugar with water and lemon juice in a small pan, bring the mixture to a boil and cook for 3 minutes. Let the syrup cool completely.


  4. Still hot mannic pour lemon glaze, not taking out of the form, and let soak for 30 minutes. Don’t worry if the cake literally floats in syrup! After half an hour, it will absorb impregnation, turning into a juicy and fragrant dessert.


  5. Serve chilled pumpkin pie with hot tea, coffee or milk, decorating with coconut shavings or confectionery sprinkle if desired. Bon appetit!
