Sweet Roulette Ingredients for Test
  • 5 eggs
  • 80g sugar
  • 60g cornstarch
  • 70g vegetable oil
  • peel 1 lemon
  • 1 tsp vanilla extract
  • 1 chip salt


Filling ingredients
  • 6-7 mandarins
  • 1 stack. tangerine juice
  • 30ml lemon juice
  • 80g sugar
  • 1/2 tsp lemon peel
  • 20g cornstarch
  • 400 ml cream (33%)


Preparation
  1. To begin, prepare the cream: pour sugar, starch and stir into the saucer. Gradually add tangerine juice to the mixture, stirring constantly so that there are no lumps. Add the freshly squeezed lemon juice, lemon peel and stir.


  2. Put the resulting mixture on a small fire and bring to a boil. Cook the mass until thickened, constantly stirring with a wreath. Cover the food film and chill.


  3. While the citrus mass is cooling, make a biscuit. Separate the proteins from the yolks, beat the proteins with a mixer with a pinch of salt, and then add half the sugar. Beat it to steady peaks. In a separate vessel, beat the yolks with the remaining sugar, add vanilla extract and once again thoroughly beat with a mixer.


  4. In the yolks add lemon peel, stir with a wreath, and then sift into the mixture of corn starch, constantly stirring the dough.


  5. Add a small amount of whipped proteins to the dough, stir, add some more proteins and stir again. Add the resulting mass to the remaining proteins, mix with a corolla, and then introduce vegetable oil into the mixture, constantly stirring.


  6. The tray is covered with parchment paper, grease with a small amount of vegetable oil and transfer the finished dough to it, evenly distributing it. Bake in an oven heated to 180 degrees for 15-20 minutes - the biscuit should be slightly browned.


  7. Crush cold cream into strong peaks with a mixer, add chilled citrus mass and mix thoroughly again. The fragrance is ready!


  8. Chilled biscuit cover a sheet of parchment paper and gently turn over, remove the paper from the base of the biscuit, cover it again with paper and turn it over again - you need to wrap the roulette with a ruddy side inside.


  9. Clean the tangerines of the peel and film. Biscuit generously lubricate with cream, leaving a little for decoration, put tangerines in a row on the edge of the crust and slightly miss them with cream. Carefully roll the biscuit base into the roulette and send it to the refrigerator for 30-60 minutes.


  10. Roulette put on a portioned dish edges up and smear the outside with residues of cream. You can put part of the cream in a candy bag and decorate the roll on top. Add fresh tangerine slices and mint petals - the roll is ready to go to the festive table!
