Profitroli with red fish and cream



Ingredients for cream and cheese cream
  • 200g butter
  • 600g cottage cheese
  • greens and onions to taste

Preparation
  1. Beat the butter, cheese and spices in a bowl.
  2. Cut the red fish and cucumber in thin slices.

Filling with smoked chicken and egg



The ingredients
  • 100g smoked chicken
  • 1 fresh cucumber
  • 2 boiled eggs
  • 1 tbsp mayonnaise
  • Prepared Profitrols (as much as necessary)


Preparation
  1. Cut chicken meat and boiled eggs in small (3-5 mm) cubes.
  2. Clean the cucumber from the skin and cut the same cubes.
  3. Mix everything in a bowl. Add a little mayonnaise so that the filling does not flow.
  4. Carefully cut the profitrols at a distance of 1 cm from the base.
  5. Fill them with filling, using a teaspoon, so that the filling looks slightly out.
  6. Put the profitrols on the dish.

Filling with crab sticks and corn



The ingredients
  • 1/2 melted cheese
  • 5 crab sticks
  • 3 tbsp canned corn
  • 1 fresh cucumber
  • 1–2 tbsp mayonnaise
  • salt
  • Prepared Profitrols (as much as necessary)


Preparation
  1. Freeze and cut the crab sticks in small cubes.
  2. Grate the cucumber.
  3. Sodium on a large grater of cheese.
  4. Drink the juice off the corn.
  5. Mix all the ingredients, add mayonnaise, salty, stir again.
  6. Cut the profitrols parallel to the base and fill with filling.

Filling with herring oil



The ingredients
  • 100g fine white beans
  • 100g weakly salted herring
  • 1 egg
  • 1 tbsp vegetable oil
  • Prepared Profitrols (as much as necessary)


Preparation
  1. Wash and soak the beans for 4 hours, and then boil them. With the finished beans, drain the water through a sieve or dudshlag and cool it.
  2. To prepare the foresmack, place the boiled beans in a blender, add the herring and boiled egg. Slightly infusing olive oil, grind the ingredients until a homogeneous mass is obtained.
  3. It remains only to fill the profits with a herring mass with a confectionery syringe.

Fitting with chicken liver pate



The ingredients
  • 500g chicken liver
  • 400g champignon
  • 25g butter
  • 1 bulb
  • 2 tbsp soy sauce
  • black pepper
  • pinch
  • Prepared Profitrols (as much as necessary)


Preparation
  1. Cut the onions.
  2. Roast the onions and mushrooms softly.
  3. Add the sliced chicken liver. Hot till ready.
  4. Season with pepper and nutmeg.
  5. Pour the soy sauce. Bring it to a boil.
  6. Take it off the stove. Cool and grind in a blender.
  7. Cut the tops at the profitols, fill them with pate and serve them on the table.

Filling of canned pineapples and hard cheese



The ingredients
  • 1 tbsp grated cheese
  • 4 rings of canned pineapple
  • 1 tbsp mayonnaise
  • 1 clove of garlic
  • Prepared Profitrols (as much as necessary)


Preparation
  1. Cut the pineapples in small cubes.
  2. Put garlic through the press.
  3. Mix all the ingredients.
  4. Cut the tops at the profitols, fill them with filling and serve them on the table.

Many people confuse Profitroli with another famous French dish - eclairs. They share the base of the custard dough. But eclairs, unlike Profitroles, are made exclusively with a sweet filling, an oblong shape and most often a larger size.
