I make a salad "Okroshka" instead of the usual okroshka, if my husband is moody on a particularly hot day.

In the middle of summer, when it is hot outside and you don’t even want to look at ordinary soups, Okroshka helps out. But if not everyone in your family likes this dish, or there are vegetables cut into okroshka, or at the last moment it turned out that there is no kvass or kefir at hand, prepare Okroshka salad according to our recipe.



The composition of the ingredients for it is almost the same as for okroshka. It tastes like an Olivier salad. However, fresh cucumbers and tomatoes, green onions and dill make it more juicy, light and summer fresh.

Okoroshka salad Ingredients
  • 3 potatoes
  • 2-3 eggs
  • 2 tomatoes
  • 150g boiled sausage
  • 2 fresh cucumbers
  • 0.5 bundle of green onions
  • 0.5 bundle of dill
  • salt and pepper
  • 3 tbsp Greek yogurt or mayonnaise


Preparation
  1. Boil potatoes in uniform, peel them and cut them in cubes.


  2. Boil hard-boiled eggs and also cut into small cubes (as for okroshka).

  3. Cube the sausage and the tomatoes.


  4. Peel off the peel and cut the cucumbers in cubes.


  5. Cut the onions and dill fine.


  6. Mix all the ingredients in a suitable bowl.


  7. In mine, it was hard to mix them, and I had to take a larger one.


  8. Fill the sliced products with yogurt or mayonnaise, salti and pepperchi, mix thoroughly.
  9. Before serving on the table, let the salad stand in the refrigerator.

Fresh tomatoes and cucumbers give abundant juice. And chilled it becomes the most delicious part of the original dish, which at the same time resembles a salad, and not liquid okroshka. Bon appetit and successful culinary experiments!
