Burgers with quinoa Greek

Burgers can be prepared not only from meat. We offer you to cook a healthier version of this dish — the Burger Greek with quinoa, green onions, beans and cucumber. Very simple and very tasty!

 





 

Ingredients:
  • quinoa — 1/2 Cup

  • carrots — 1 piece

  • green onions — 6 pieces

  • green beans — 45 grams

  • breadcrumbs — 1/4 Cup

  • egg — 1 piece

  • ground cumin — 1 tbsp

  • salt and pepper — to taste

  • olive oil — 2 tbsp

  • Greek yogurt — 1/2 Cup

  • lemon juice — 1 tbsp

  • pita bread — 4 pieces

  • cucumber — 1/2 (thinly sliced diagonally)

Preparation:1. In a small saucepan, bring 3/4 Cup water to a boil, add quinoa, cover and reduce the heat to low. Cook until the liquid is absorbed, 12 to 14 minutes. Put aside.
2. In a food processor to chop the carrots. Add cooked quinoa, half the scallions, beans, breadcrumbs, egg, cumin, 1 teaspoon salt and 1/4 teaspoon pepper. Mix well.
3. Divide the mixture into 4 parts and form patties. If the mass is too soft, chill 10 minutes.
4. In a large skillet, heat oil over medium heat. Cook patties until brown, 8 to 10 minutes on each side.





5. In a small bowl mix the yogurt, lemon juice and remaining green onions, season with salt and pepper. Serve burgers in pita with cucumber and yogurt sauce.
