Zucchini soup — the perfect dish for those fasting, and to spring detox your body. Its soft texture is very beneficial for irritated overeating tissue of the stomach and intestines, helps to gently cleanse the body. Try to cook the soup according to this recipe and you will forever be his fan!
Ingredients:
- 1 small zucchini
- 3 teaspoons vegetable oil
- 2 medium parsnip root
- 1 medium leek (white part)
- 350 ml vegetable broth
- 2 tablespoons toasted cashew nuts
- salt and pepper to taste
Cooking a cream soup of zucchini:
1. Cut the squash into halves. Remove the seeds if they are too large. Cut into small cubes. Clean parsnips, cut into cubes. Put in any heat resistant container. Pour on top of vegetable oil.
2. Preheat the oven to 200°C. Place the vegetables for 30-45 minutes, periodically stir them.
3. Heat the vegetable oil in a saucepan. Add white part of leek, cut into thick rings. Cook over medium heat until tender, about 10 minutes.
4. Add to the onion-leek baked zucchini and parsnip, broth, salt, pepper, spices to taste. Cook for another 5-10 minutes.
5. With a blender whisk the soup to a puree and boil again.
6. Before serving, sprinkle the soup with toasted halves of cashew nuts.
