Scientists from the University of Granada (Spain) conducted an experiment to determine how different ways of cooking vegetables affect the content of polyphenols — powerful antioxidants that reduce the risk of cancer.

During the experiment, potatoes, onions, eggplants, artichokes and peppers were boiled, stewed and fried in olive oil, and then compared what vegetables preserved the most nutrients.
