Mashed cauliflower is a healthy alternative to the usual potatoes

Tired of the usual mashed potatoes and you are looking for an alternative?

The perfect solution would be to air a puree of cauliflower with celery, which is a great side dish for fish.



Mashed cauliflower, celery, garlic and thyme

Ingredients (for 6-8 servings):

 

  • 1 large head of cauliflower
  • 1 medium celery root
  • 1 large potato
  • Bouquet Garni (3 sprigs thyme and 1 Bay leaf tied with gauze)
  • garlic — 1 clove
  • 50 grams unsalted butter, cut into large chunks
  • sour cream — 1/2 Cup
  • 1 teaspoon of salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • Sprigs of thyme for decoration
 

Bouquet Garni (3 sprigs thyme and 1 Bay leaf tied with gauze)



 

Preparation:

Mix the cauliflower, celery root, potatoes and the bouquet Garni together in a large saucepan. Pour water to cover the ingredients.

Bring to the boil and simmer, cover, and cook until pocase the vegetables are soft. Drop the vegetables in a sieve if a sieve, remove the bouquet Garni. All ingredients, place in food processor. Add the garlic, butter and mashed potatoes, beat until a homogeneous mass. Add the remaining ingredients, mix again.
