Carrot cake — incredibly delicious and healthy!

We're all used to that the cakes are associated with a lot of butter, flour, and sugar. Healthy food such sweetness can not be called. But all of these ingredients can be replaced, so the cake will not only be tasty but also healthy! Our carrot cake is a proof.





Ingredients (for 6-8 servings):

3 eggs
1-2 bananas
10-15 soft dates (seedless)
6 tbsp olive oil
1 Cup flour whole wheat
1 ½ teaspoon baking powder
3 teaspoons cinnamon
½ Teaspoon nutmeg
½ Teaspoon cardamom
3-4 carrots (medium size, grated)
½ Cup coconut flakes
½ Cup walnuts (chopped)
1/2 Cup raisins

Glaze:

  • 200 g cream cheese
  • 3 tablespoons honey
  • 1/2 lime (juice)
  • 1/2 Cup hazelnuts
Preparation:
 

Preheat the oven to 180°C.

Beat the eggs in a medium bowl. In another bowl, using a blender (or mixer) mix the bananas, dates and oil until smooth.

Sift together the flour, baking powder, cinnamon, nutmeg and cardamom, stir together with eggs and banana mixture. Add grated carrots, coconut, walnuts and raisins, mix thoroughly.

Pour batter into cake pan and bake for about 40 minutes. (The readiness check with a toothpick if the center of the cake it comes out dry, the cake is ready). Allow it to cool. Whisk together cream cheese and honey.

Pour over the cake when it is completely cool. (Dates and bananas can be additional sweeteners). Garnish with hazelnuts or walnuts.
