Such zucchini noodles and pesto sauce are a simple dish that will certainly appeal to your whole family. And the addition of moringa powder will make this dish very useful, since moringa contains calcium, carotenoids, in and potassium.



The ingredients

  • 2 little zucchini
  • 2 small avocados, peeled
  • 2 cups of fresh basil leaves
  • 1 1 1⁄4 clove of garlic
  • 1/4 cup olive oil
  • 2 teaspoons of fresh lemon juice
  • 1/4 cup of grated Parmesan cheese (optional)
  • Sea salt and freshly ground black pepper, to taste
  • Cherry or cocktail tomatoes, if desired
  • 2-3 tablespoons of moringa powder


Preparation:

1. In the blender, put avocados, basil leaves, crushed garlic, a tablespoon of moringa powder, lemon juice, salt to taste. Stir it to a homogeneous mass.

2. Pour the olive oil slowly, then add the finely sliced parsley, stir again.

3. Cut the zucchini into noodles (use a special grater-shink or knife to clean vegetables). Put it aside.

4. Pour some olive oil into the pan, put on a small fire. Put noodles in it, mix them with pesto. Add the tomatoes on top. Serve the dish warm or cold, if desired, sprinkle with parmesan.
