Cheese made from sunflower seeds — vegan recipe
This cheese goes well with fresh vegetables and herbs. It can be eaten with the slices of cucumber and sweet tomatoes. And also tasty to add to a gazpacho or other cold soup.
Ingredients:
- seeds
- a bunch of dill
- large clove of garlic
- sea salt, pepper
- the juice of one lemon
- turmeric
- mustard
- The seeds soak overnight. If seeds do not soak it in cheese, there is a clear taste of sunflower seeds, spoils all the efforts.
- The next day the seeds in a blender to a paste, adding a little water, one in which seeds were soaked. The main thing is not to overdo it!
- Add the finely chopped fennel and all the other ingredients, roll into ball, wrap in cheesecloth, squeeze to put on the press for 8 hours and leave in a warm place, the first couple of hours, periodically draining the water that will stand out. Then this water can be added to raw soups instead of vegetable oil.
- After fermentation, cheese – share it in the fridge overnight.
