250 ml cream 20%
3-4 tbsp lemon juice
a pinch of salt and sugar

How to cook:

1. In a large saucepan combine the milk, cream, sugar and salt. Heated to a temperature of 90°C (if no cooking thermometer, you can see the moment when the milk is almost boiling, this is the desired temperature), stirring constantly so the milk does not burn.

2. Remove from heat until boiling (very important!), add lemon juice, stir and leave for 5 minutes. The milk will start to flake.

3. The colander cover with several layers of cheesecloth and strain the liquid. Leave at least 1 hour. The longer you survive, the thicker the cheese turns out. It is recommended to cool before use.
