Italian Frittata with pumpkin: the perfect Breakfast in 5 minutes!

Frittata is always an easy and quick recipe to create a delicious and hearty Breakfast from any vegetables left in the fridge. Frittata is the equivalent of the omelet, just cook it without cream or milk.

In Italian dish you can add absolutely any vegetables as well as mushrooms, cheese, soy, tofu, or any ingredient to taste.





To prepare a Frittata of zucchini and pumpkin, you will need:

  • 3 eggs
  • a small slice of pumpkin
  • half a small squash or zucchini
  • 1 tbsp vegetable oil
  • half a small bulb
  • 1 pinch of dried thyme
  • salt and pepper to taste
1. Cut the pumpkin into thin slices.

2. Slice the zucchini in thin rings.

3. Chop the onion dice.

4. In vegetable oil fry the onion until Golden, then add the slices of pumpkin and fry until soft.

5. Add to pumpkin zucchini and cook the vegetables until tender and Golden brown.

6. While the vegetables are roasting, whisk eggs with thyme, salt and pepper.

7. Pour the beaten eggs on the frying pan to the vegetables, wait until the omelet is browned on one side, then flip the Frittata and fry to Golden color the other side.
