SBITEN
A hot drink made from spices and herbs, sweetened with honey, molasses or sugar. Mass consumption of drink faded after the October revolution. Since the 1990s there have been attempts in Russia industrial production of the drink, packaged in bottles. But it is approximately the same as the industrial brewed tea — after all, sbiten, and tea, is good, freshly prepared.

Strain through cheesecloth or a fine sieve.
Serve hot.

Boil for 10-15 minutes. Drain.

City sbiten
— 500 g of honey,
— 700 g white molasses (or thick sugar, fructose syrup),

Cooking
Boil water and adding all the components, boil for ZO minutes. To drink hot as tea.
Kukushkin sbiten
— 1 kg of honey,
— 20 g of hops,
— spices to taste
— 4 l of water.
Cooking
Dissolve the honey in boiling water, add hops and spices and boil for 2-3 hours, boiled sbiten filtered and cooled.
This sbiten drink cold.
Sbiten pancake
— 150 g of honey
— 1,5 – 2 liters of water
— 100 g of sugar
— 2 – 3 teaspoons of dry grass Hypericum
— 2 clove Bud
— 5 – 6 grains of black pepper
— 0,25 tsp of ginger powder
— 1 teaspoon of cinnamon
2 teaspoons mint
Honey to boil in a saucepan, spreading 1 Cup of water, remove the foam. Separately boil the sugar, spreading 1 Cup of water.
To connect both parts, boil together in a homogeneous mass to evaporate more water (but on low heat without allowing appreciable boiling).
In the rest of the water cook the spices for 15 – 20 min in a closed vessel, let stand another 10 minutes, then strain, add honey-sugar mixture and reheat, without boiling.
Only drink hot.

A variety of Sbitnev — always a welcome drink, they served not only Mardi Gras table.

Custard fragrant sbiten
1 kg of honey,
3 liters of water,
1 tbsp yeast
40 g of hops,
1 teaspoon cloves,
2 teaspoons ground cinnamon,
1-2 cardamom seeds,
2-3 escape of fresh mint.
Med in small portions to dissolve in warm water, stir thoroughly, then with continuous stirring to boil it on low heat for two hours, removing the foam.
15 minutes before the end of the boiling honey to add hops and spices. Drain the mixture into a clean barrel, and when it has cooled, add diluted in a small amount of water yeast.

Sbiten Suzdal — 2
150 g of honey,
6 tablespoons sugar

Sugar to be heated up to the formation of brown color, cooling and dissolving in a small amount of hot water.

1 liter of water,
4 tbsp. spoons of sugar,
