The secret of making SUPER food of the simple roots
Let me share with you an interesting idea. The tradition is ancient, but completely gone from our daily lives. In Russia we say: "cakewalk" — filled with chopped root with water and left it simmering on the stove overnight in a clay pot, when the damper is closed and the oven gradually cools.
It is difficult to imagine a more lazy method, and thus, as it turns out, more intelligent – these are the roots, perhaps, can be considered "superpixel" — the most nutritious and energizing, with possible use of turnips and other vegetables: carrots, beets, Jerusalem artichokes, sweet potatoes, pumpkin, potatoes, etc.
How does it work? Biologist Yuri Frolov explains:
Cells of vegetables and fruits protected by a membrane, inside the cytoplasm and other functional substances. When the membrane is broken (bite, cut, press, MNU), the enzymes contained inside the cell out into the cytoplasm and begin to dissolve, to break down the cell itself – that is, start the process of autolysis (the same happens with damaged barrels of fruit). The most favorable conditions for this process – the heat and humidity, which is why steaming is best held at a temperature of 45-50C over night (8-12 hours), and "infusion" will be no less useful than stewed vegetables.
"The mechanism is triggered, the enzymes started to break down the cells, in fact it is something that should begin in the gut – so our bodies don't have to spend (synthesize) their own enzymes for the digestion of such food, energy for the digestion will not take, and Vice versa, we can get from such food as much power as possible for themselves."
This principle works only if we use one kind of vegetable that is called "mono", because the enzyme every product your own, when mixing the process of autolysis will go longer or no errors.
At home it is convenient to use a thermos with a glass flask or a yogurt maker, you can simmer in a low temperature drying-dehydrator.
And the finished slow-cooked vegetables can be whipped in a blender with the infusion or even to let it sit after that, even a little bit.published
