Carrot salad with tofuyou Need:
carrots – 2 PCs,
tofu 350 g,
Apple cider vinegar – 2-3 tablespoons
soy sauce – 3-4 tablespoons
any vegetable oil,
spices – coriander, black pepper – 1/2 teaspoon asafetida – a pinch.

Prepare:

Carrots wash, peel and grate on a coarse grater. Add to it the spices.

Tofu cut into medium cubes and fry in vegetable oil.

Then to the carrots, add tofu, right along with oil. Add vinegar and soy sauce (to taste), all mix well.

Leave the salad for 3-4 hours – it needs to infuse. Then served to the table.!!! If the salad will be too much oil, the excess can be drained.

Salad of boiled carrots

You will need:
carrots – 500 g,
onion – 100 grams,
eggs – 3 PCs,
walnuts – 100 g,
salt, pepper – to taste
vegetable oil – any of them.

Prepare:

Carrots boil until tender and RUB on a grater. Do the same thing with eggs.

Onions fry in butter. Nuts finely grind them. All components mix, salt, pepper and dressed with oil.

Carrot soup with gingeryou will Need:
fresh carrot – 500 g,
water or vegetable broth – 5 cups,
onion – 1 piece,
celery – 1 stalk,
ginger root – 1 tablespoon
zest and juice of 1/4 lemon
olive oil – 3 tablespoons,
salt – to taste.

Prepare:
Carrots and onions finely chop, celery – small cubes.

All put in a pot with pre-poured oil. Sprinkle with salt, cover with a lid and simmer on low heat until until vegetables are soft. Add the grated ginger, simmer for another few minutes.

Then add to the pan water or broth and bring to a boil. Keep on fire for a couple of minutes and remove. With the help of a blender make all the contents of the pan into a puree. Add the zest and lemon juice. The soup is ready. Served hot.

Vegan carrot cakesyou will Need:
fresh carrot – 500 g,
semolina – 1-2 tablespoons,
onion – 1 large or 2 medium,
flour,
salt, pepper
vegetable oil,
sesame seeds – optional.

Prepare:

Carrot RUB on a grater, finely chop the onion. Mix. Add the spices, semolina (it serves to bond the cutlets). Now waiting for: carrots should give the juice and semolina – fed to them. The consistency should be such that from it it was possible to sculpt cakes.

Then dip them in semolina and fry in vegetable oil or bake it in the oven. Optional – you can sprinkle the finished patties with sesame seeds. published
