Farinata with grilled vegetables
Farinata is a simple baked pancake of chickpea flour with different additives.
Ingredients:
Dilute a Cup of chickpea flour 1 Cup of water, it is necessary to obtain a batter without lumps.
Add salt, a spoonful of olive oil, stir. Leave the dough to stand for at least 30 minutes, stirring occasionally.
You can leave for a few hours, in the end, the dough will thicken slightly and it will have small bubbles.
While the dough stand, you need to prepare the vegetables. Actually, farinata can be done with any additives — fried onions, mushrooms, tomatoes, vegetables, herbs, peppercorns, garlic, cheese, bacon... you Can add everything to taste).
We used the fried vegetables gilevoy the pan.
Eggplant and young zucchini cut into thin strips and quickly fry until soft gilevoy on a heated pan, lay on plate, sprinkle with lemon juice, a little prisolit.
Onion, cut into rings, fry in olive oil. Grate cheese on a fine grater. Sun-dried tomatoes cut into strips.
Preheat the oven to 220°, the shape with low sides with olive oil, pour in the batter and put to bake for 20-25 minutes.

Ready to remove the farinata from the oven and put to cool completely in the form, then lay it on a Board or platter and cut into portion pieces, sprinkle with rest of cheese, pepper, herbs, a sprinkle of lemon juice and olive oil to taste.
Farinata can be eaten cold or warm, it is delicious either way.
