Pancakes with strawberry mousse and white chocolate

For the mousse:
1 cup milk
1/3 cup sugar
2 tablespoons of starch
1 egg yolk
1 teaspoon vanilla
1 tablespoon butter
85 g white chocolate, chop
1/2 teaspoon gelatin
1 tablespoon cold water
240 ml whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla

For the pancakes:
120 g flour
2 tablespoons sugar
2 eggs
2 egg yolks
4 tablespoons butter, melted and cooled
1 teaspoon vanilla
1 cup milk
2 cups strawberries, cut
1 tablespoon sugar
1/4 teaspoon vanilla
Powdered sugar, for dusting

Start by preparing a mousse. In a medium saucepan, combine the milk, starch, sugar and egg yolk. Stir until smooth. Place over medium heat and bring to a boil, stirring occasionally, until thick and (about 10 minutes).
Turn off the heat and add the vanilla, butter and white chocolate. Stir to completely melted chocolate and pour the mixture into another bowl, passing through a sieve. Cover with plastic wrap and refrigerate at least 4 hours, preferably overnight.
In a small bowl, combine gelatin and water. Leave on for 10 minutes and then put in the microwave for 10 seconds to melt. Cool to room temperature.
In a medium bowl, mix cream, powdered sugar and vanilla. Whisk until thick. Gradually pour the gelatin, continuing to beat until stable peaks. Enter the whipped cream into the cooled chocolate mixture (adding 3). Close the foil and place in the refrigerator for an hour.
Until mousse is cooled, prepare the pancakes. In a medium bowl, mix flour and sugar.
In a separate bowl, whisk the eggs, egg yolks, butter and vanilla. Pour in the milk and whisk again.
Pour the mixture into the flour and knead the dough. Put a bowl closed by a film, for 30 minutes in a refrigerator.
Ohdazhdaetsya until the dough, mix the chopped strawberries with vanilla and sugar. Mix well and send in the refrigerator until needed.
Chilled dough, remove, heat the pan. Fry thin pancakes on both sides until golden brown. Cool to room temperature.
