I really liked this recipe. Cabbage turns crispy and very interesting to taste. With mashed potatoes and pork chops, we're in the house with a bang. For me, this is a great alternative to homemade salad in the cold. It's juicy, crunchy and tastes great. I did not appreciate the taste of the beets, but my husband really liked it. Salting cabbage in brine Ingredients
- cabbage
- 0.5 kg beet
- 5 cloves of garlic
- pepperpod
- pepper-pea
- 50g salt
- 1 tsp coriander
- boiling-water
Preparation
- Take an average cabbage head, about 2.5 kg. Cut it into pieces along with the cap. Cut the beets in circles. Peel the garlic and cut the pepper in small pieces.
- Now take a large pan and put the following layers into it: cabbage, beets, slices of garlic, pepper. Sprinkle black pepper on top. If you want, add some coriander. Lay out the layers in this sequence until the ingredients run out. To the top of the pan should remain about 5 cm.
- In a separate pot boil water. Add salt to it. You can change the amount of salt to your taste. Cabbage takes salt well, so it is not afraid if the brine is brackish on its own.
- This hot brine is pouring into our vegetables. Put the plate upside down and cover it with a lid.
- Cabbage will be ready in 4-5 days. You can serve it as a salad to the side dishes. The brine itself can also be drunk, it is useful for the gastrointestinal tract and is somewhat similar to beet kvass.
