The former cook of the Soviet dining room passed the recipe “Hedgehogs”, meat in the composition is present

In our kindergarten menu, this dish was once called Hedgehogs. Times are different, but the old recipe is still relevant. It gives you an opportunity to save a little on meat. It helps others to feed the little ones. And for me, hedgehogs with rice and minced gravy are another nostalgic memory of the Soviet catering.

"Hedgehogs" with rice and minced gravy Ingredients for cutlets and side dish
  • 1 tbsp rice
  • 500g mince
  • 1 tbsp breadcrumbs
  • 1 tbsp water
  • 3 cloves of garlic
  • 1 bulb
  • 20g butter
  • 1 egg
  • salt and pepper
  • vegetable-oil

Gravy ingredients
  • 1 tsp tomato paste
  • 1 tbsp flour
  • 0.5 tables of water

Preparation
  1. Pour breadcrumbs with a glass of water and leave for 5 minutes.

  2. Grind in a bowl of blender garlic and onions. Of course, there were no blenders in Soviet times, and onions along with meat were passed through a conventional meat grinder. But we have ready-made mince in the recipe, so we need to somehow get out of the situation.
  3. Put the mince in a bowl. Add the crushed onions, peppers, egg and swollen crackers.

  4. Stir it with your hands.
  5. Form from the resulting mixture of cutlets.

  6. Pump them in breadcrumbs and send them to a pan heated with vegetable oil.
  7. Heat on an average heat for about two minutes on each side.

  8. For everything to be exactly like in the Soviet dining room, there is not enough gravy.
  9. To prepare it, pour half a glass of water, add a teaspoon of tomato paste and a tablespoon of flour. Stir with a fork carefully so that there are no lumps.
  10. Extinguish in this mixture cutlets 5-10 minutes. The gravy should thicken during this time.
  11. Pour in a clean dry pan washed rice. Roast it for 3 minutes. Then add 600 ml of boiling water.
  12. Cover the lid and carcasses for 5 minutes on low heat.
  13. Then put on rice pieces of butter and cutlets. Cover the lid and mascara for another 10 minutes on low heat. In order not to miss any details, watch the recipe video on the culinary YouTube channel Shi da Kasha.

  14. Bon appetit!

Many people who grew up in the USSR remember the tasties of that period and desperately miss them even now, when the shops are utterly abundant. It is true that the taste of childhood can not be felt, but you can and should remember! To do this, we will tell you about 23 delicacies that were once adored by all Soviet children.
