Preparation
- You need to make the syrup first. To do this, pour the specified amount of water into the pan, wash and lower all the leaves there. Bring a decoction of cherry leaves to a boil on the fire. Cook on a slow heat for about 10 minutes, making sure that the broth remained green.
- Now we move on to the preparation of the gooseberry. To do this, each berry must be trimmed with scissors of the tails at both ends. Then take a stud or toothpick and make punctures on each berry in two or three places. This is done so that the berries do not burst during the cooking process.
- Take the leaves out of the broth and put some of them aside. Add sugar to the resulting broth. Put the pan on the stove and boil the future syrup, while making sure that the sugar completely dissolves.
- Carefully pour hot infusion of gooseberry berries. Note that the first portions of the syrup should be poured either with a ladle or a tablespoon so that the berries warm up gradually (if the syrup is immediately poured out of the pan, the berries are likely to burst). The last portion of the syrup can be poured from the pan.
- Doused with syrup gooseberry leave to infuse for 5-6 hours.
- Put the pelvis with jam on the stove and on a slow heat bring it to a boil, stirring carefully so as not to injure the berries. Cook the jam for another 3 minutes and leave it to infuse again for 6 hours. Then repeat all the same actions again (cook, and then leave for 6 hours to brew).
- Now put the deposited part of the boiled cherry leaves in the jam bowl and boil the future jam again for 3-4 minutes on a slow heat.
- That's it, the jam is ready. Hot jam spills into pre-sterilized jars and twist the covers.
- This jam has a lot of sugar, so it can be stored at room temperature. Bon appetit!
