While riding in a taxi, I learned the recipe of phali, the kind Georgian told the subtleties of cooking a national dish

The other day I was lucky enough to meet a very kind gentleman. I was just coming back from my goddaughter's birthday party and waiting for a taxi at the entrance of a small (but very pretty) Georgian cafe. At this time, a stranger approached me, noted that I had chosen a successful restaurant for a meal and began to talk about the traditions of Georgian cuisine.

Oddly enough, I quickly got involved in the conversation, as the story of the man seemed to me very entertaining. In the middle of our dialogue, a taxi arrived and I had to leave, which I regretfully hurried to inform my interlocutor. It turned out he was on his way to the house, too, and we were just on our way. We decided to go together and split the bill in half.

So during our trip, I learned a lot of interesting nuances about the preparation of traditional Georgian dishes. What surprised me the most was how easy it was to make my favorite green snack called Phali.



On the advice of my new friend, I bought a whole bunch of fresh greens that evening, found the Niko Chachanidze Canal and set about improving my cooking skills.

Snacks of green ingredients
  • 0.5 kg spinach
  • 0.25 tsp ground coriander
  • 100g walnuts
  • 2 cloves of garlic
  • 0.5 tsp Utzho Suneli
  • salt
  • 1 tsp apple cider vinegar
  • chili
  • 0.25 grenades


Preparation
  1. First of all, thoroughly wash the spinach under running water, then lay it out to the pan and pour boiling water. With the help of a wooden spatula, we do a little spinach so that it is completely immersed in water. We steam our greens for 2 minutes, and then we pull out and put them in a bad hose.



  2. When spinach cools, gently press it to remove excess moisture from steamed leaves.



  3. Next, put spinach in a blender or meat grinder and grind. We do the same with walnuts and cloves of garlic. If desired, you can experiment a little and add a little onion, cilantro or even cabbage to the snack. The taste of such phalis is very unusual and almost incomparable.





  4. Next, add all the spices to the resulting mass and mix everything well. After that, it remains only to give our snack an aesthetic appearance.



  5. Wet your hands with cool water, type a little mixture and form a ball. Repeat the procedure until you have used up all the spinach mass. At the end, it remains only to beautifully lay out fragrant phali on a plate and decorate the snack with pomegranate grains.
