Eggplant caviar recipe with onions

In quarantine I cook delicious caviar in Romanian. It is based on eggplant with onions. I found a way to prepare this delicious food in my grandmother’s notebook with recipes.

  • 2 eggplant
  • 1 bulb
  • 1.5 tsp vinegar (25%)
  • 0.5 tsp lemon juice
  • 2 tbsp vegetable oil
  • 50-70g dill
  • salt, pepper to taste




Preparation
  1. Wash the eggplant, randomly prick them with a fork over the entire surface of the vegetable and put them baked in the oven at a temperature of 180 degrees for 45 minutes until ready.



  2. Peel, wash and finely chop the onions. Pour the onions into a comfortable container, salty, peppery to taste and marinate it in vinegar and lemon juice for 15 minutes.



  3. Clean the eggplant from the skin and grind with a knife or blender.



  4. Pair the eggplant with the onions. Add vegetable oil and crushed dill (if desired). Stir it well.
