- 500g mascarpone
- 400 ml of fatty cream (< 30%)
- 250 ml of espresso coffee (can be soluble)
- 50g unsweetened cocoa powder
- 200g regular sugar cookies

- 300g sugar
- 100 ml of water
- 1 tsp vanilla essence

- Consistency should not seem complicated. First, at small turns, beat the yolk with a mixer. In parallel, prepare a syrup of water and sugar, readiness comes when the syrup begins to thicken. Turn on the mixer at higher speeds and gradually pour the syrup into the yolks. Continue until the cream cools.
- Put the egg cream aside for now and beat the chilled cream, but stop a minute before you finish. In a separate mascarpone softener (can be made with a spoon or spatula), add the yolks and mix thoroughly. Now add the cream and stir until you get a uniform and airy cream.
- Separately brew the coffee and let it cool completely. Soak in a sugar cookie and stack it in a pre-cooked form, then apply the cream and so on layer by layer until the ingredients run out. Put the cake in the refrigerator for at least five hours, preferably all night. Before serving, be sure to sprinkle the cake with cocoa powder well. Done!
