What to please a grandson, spoiled by overseas sweets

My grandchildren have recently fallen in love with sandwich cookies with a layer of cream between the layers. But grandparents are not afraid of competition with the supermarket and always find something to surprise the kids.



This time we got a recipe for soft air soufflé cookies. The products are the simplest, only jam is added.





And the taste is not worse than that of the vaunted French Macarons, the aroma of which today offer to enjoy not only confectionery, but also famous perfume houses.

Sandwich cookie ingredients for cookies
  • 200g flour
  • 250ml cream
  • 100g sugar
  • 1 egg
  • 0.5 tsp soda


Souffle ingredients
  • 200g jam
  • 20g gelatin


Preparation
  1. Mix sour cream, egg and sugar in a bowl. Stir it.
  2. Add soda to the flour, stir.


  3. Connect the dry and liquid components. Mix the thick dough.
  4. With the help of a confectionery bag, form a thin cookie on a baking pan covered with baking paper.


  5. Bake for 10 minutes in a preheated to 200 degrees oven.
  6. In the meantime, you can make a soufflé.
  7. Dilute the jam with boiled water to the state of berry puree. Add gelatin, stir. Heat the mass until gelatin dissolves. But don't boil.


  8. Cool the mixture to 35 degrees and beat the mixer for about 5 minutes. When the soufflé is ready, it will become lighter, grow in volume and thicken to a stable foam.


  9. Put the soufflé on one cookie and cover the other. Send 20 to 30 minutes to the fridge.


  10. That's it! Souffle sandwich cookie ready.
