Test ingredients
  • 300 g butter (can be replaced with margarine)
  • 250g sugar
  • 5 yolks
  • 3 tbsp cocoa
  • 18g baking powder
  • 5 tbsp sour cream
  • 3 tbsp flour

  • 10 tbsp sugar
  • 6 tbsp. l jam (thick, you can cherry seed)
  • 5 proteins
  • 200g peanuts

Cream ingredients
  • 400g butter
  • 400g condensed milk


Preparation
  1. To prepare cakes, beat the oil with sugar, then gradually add the yolks. Get a good mixer.



  2. Then add sour cream, flour with baking powder and cocoa. If necessary, you can add a little more flour. But you shouldn't score too hard. The finished dough is collected in a lump, and then divided into 2 parts: one large and one smaller (large 2/3, and the smaller 1/3). A large partition into 3 parts - it will be crusts. Put them in the fridge for an hour. The smaller is also divided into 3 parts, but they must be put in the freezer for an hour.

  3. While the dough is in the refrigerator, you can take care of the layers. Peanuts roast and grind. Soak the apricot in water for half an hour, and then cut finely. In a convenient container, beat the protein with sugar to a stable foam. I usually whip for more than 5 minutes at high revs.



  4. Prepare a square form for baking (I have 22 by 35 centimeters), covered it with parchment paper. Dough from the refrigerator thinly roll, and then lubricate with jam, sprinkle 1/3 of peanuts and 1/3 of dried apricots. Cover the third part of the whipped proteins and rubbed one part of the dough from the freezer. Bake in a preheated to 180 degrees oven for 25-30 minutes. Do the same with the rest of the test. There should be 3 boxes.





  5. With cream, it's simple: mix boiled condensed milk with butter. You can use a mixer.



  6. And now the cake itself. Cut the waffles in the shape of the crusts. On a comfortable flat surface (I have a large cutting board), lay out the waffle, then thinly lubricate it with cream and lay out the cake, then - again the cream, and again the waffle, the cake - and so on, until the cakes run out. The top layer is waffle.
  7. The finished cake should be pressed with a board with a small load and left so for an hour on the table. It is better to put the cake in the refrigerator overnight. After the sweetness is infused in the refrigerator, its taste is revealed to the full. Oh yes, you can also cover the cake with chocolate before you put it in the fridge.
