Preparation
  1. We wash the meat and put it in a large pan. Then we pour three liters of water. Bring to a boil, remove the foam and salt. We also add black and sweet pepper. We cook meat for about 1.5-2 hours. When the meat is ready, it will need to be taken out of the broth, cut large and returned to the pan.



  2. Now take the beets, peel it, cut it on a large grater. Next, take a pan, melt in it 50 grams of finely sliced lard. There we add beets, vinegar and 1-2 tbsp. l. meat broth. Stew beets to a state of softness about 15-20 minutes. At the end, add a tomato paste and mix well.



  3. Now we take the potatoes and cut them into quarters. It is also necessary to clean the seeds of sweet pepper, cut it into large parts. 0.5 cabbages are finely inserted. In a pan with meat and broth, add potatoes, pepper and cabbage. After 5-10 minutes, pour stewed beets there. It is also necessary to cut carrots, onions, and the root of parsley to peel and finely tinker. Then you need to roast vegetables on lard, stirring, about 5-7 minutes. Put the roast in the pan and continue to cook on low heat until the potato is ready.



  4. Now we take a mortar and crush in it the remaining finely cut lard, garlic and greens to a state of porridge. Then this mixture is laid out in a pan with borscht, add a bay leaf. Bring borscht to a boil under the lid, remove from the fire and leave to brew for about 10 minutes.



  5. You can serve borscht with sour cream and pimples, grated garlic. Also, if necessary, you can make borscht sharper, dropping a hot pepper pod into the plate for a while.
