Instagram / @klopotenko I'm talking about it for a reason. Recently, Ukrainian borscht was included in the list of intangible cultural heritage of UNESCO. In many ways, the famous Ukrainian chef Yevgeny Klopotenko contributed to this: “I decided to protect borscht so that the world would perceive it as part of the DNA of the Ukrainian nation.”

Together with his team, the chef applied to UNESCO, taking into account all the rules and nuances. All training was carried out by folklorists, historians, specialized researchers and experts who already have experience with UNESCO standards.



Klopotenko went on an expedition to different regions of Ukraine to find out how Ukrainians cook borscht. The cook recalls, We filmed and documented everything carefully. Our task was not to fix recipes, but the culture of making borsch by three generations of one family. After all, this was the name of the nomination for which we planned to apply – “Culture of Ukrainian borscht preparation”.

Experts collected 25 borsch recipes from 25 regions of Ukraine. And each one is unique. There is no strict sequence of actions in the preparation of this dish. Each Ukrainian family has its own tricks, thanks to which borscht turns into a national treasure.



Klopotenko summarizes: “For the nomination dossier, we collected about 700 pages. Added to it historical intelligence, proverbs and sayings about borscht. We appealed to the territorial communities in order to register that the people who provided the prescriptions actually live in a particular territory.”
