Classic French Julien, which an elderly madam bakes in tartlets

What we used to call Julien is not really a particular dish in French cuisine. Julien is a way of cutting vegetables for salads, soups and sauces. Vegetables are cut thinly, but at the same time so as to preserve useful substances in the dish. By the way, the very name "Julien" according to one version comes from the name of Julien and means "freshness and usefulness of vegetables". Today we will prepare a high-calorie, but very tender Julien with mushrooms in the oven.



Julien with mushrooms in the oven Ingredients
  • 500g chicken fillet
  • 300g champignon
  • 200g sour cream
  • 200g hard cheese
  • 50g flour
  • 20g butter
  • 2 pieces of onions
  • 30 ml of vegetable oil
  • salt
  • peppery


Preparation
  1. Wash the mushrooms in cold water and cut into small cubes.



  2. On the heated frying pan, the mushrooms are in their own juice without oil until the moisture is completely evaporated.



  3. Now finely chop chicken fillet and onion. Add to the pan 20 g of butter and 30 ml of vegetable.



  4. Sprinkle and pepper Julien to taste, cover the pan with a lid and roast all 15 minutes on low heat.
  5. While the dish is being prepared, mix flour with sour cream in a bowl. Stir carefully, try to achieve a smooth consistency without lumps. Heat the sour cream in a separate pan until boiling.



  6. Put the mushrooms and chicken in portion pots and pour everything on top with sour cream sauce. Grate hard cheese on a fine grater and sprinkle it on Julien. Already at this stage, a delicious creamy aroma is felt. Take your time, this beauty has yet to be baked.
  7. Bake Julien with mushrooms in the oven at 18 degrees 30-35 minutes. If you want Julien not to have a crispy crust on top, add the cheese 5 minutes before ready.
