Vegetable baklava without sugar!

Vegetable baklava from whole wheat flour with dried fruit:

Ingredients (dough):

  • wholegrain wheat flour 200 gr

  • 150 ml of water
  • vegetable oil 1.5 tbsp
  • salt 1/8 tsp.

Ingredients (filling):

  • prunes 85g
  • dried apricots 85g
  • raisins 85g
  • walnuts 15g
  • hazelnut 15 gr
  • peanuts 15 gr
  • ground cinnamon 1 tbsp

Ingredients (syrup):

  • honey, you can substitute Jerusalem artichoke syrup or maple 150 gr
  • water 100 ml
  • lemon juice 1 tbsp
Preparation:

1. Soak dried fruit in boiling water. With dried fruit drained, the nuts go through. Chop the nuts and dried fruit on the middle pieces. Mix dried fruit, nuts and ground cinnamon.

2. Knead the dough from flour, 150 ml warm water, vegetable oil and salt. It is elastic and pliable. Leave the dough for 15 minutes covered with a towel.

3. Divide the dough into 8 equal parts. The first layer of dough roll out to a diameter slightly larger than the diameter of the mold (the recipe used a form of 22 cm). The dough portion of toppings. The rest of the dough is cut in circles of smaller diameter. Cover the filling with a second layer of dough, again to put some of the filling — so for now it's all over. The last layer of dough to roll out, cover them with the filling and carefully close up the ends in a circle.

5.Prepare the syrup: in a saucepan mix the honey with 100 ml of water and lemon juice. Bring to the boil and cook for 5-7 minutes on medium heat, periodically stirring.

6. Pour syrup baked cake, pre-cut it diagonal slices.
