Kimchi from Chinese cabbage — world snack, guests literally sweep it off the table!

Kimchi (kimchee, Kim Chi, kimchi...) — spicy Korean snack based on Chinese cabbage. There are over 100 varieties and ways to prepare this salad: fancy Korean cooks no boundaries!





"Website" offers to test the optimal recipe kimchi (without the use of exotic ingredients such as fish sauce). Cabbage cooked this way turns out juicy with a rich, moderately spicy flavor.





Kimchi Beijing kapustinite
  • 1 forks (weighing up to 1.5 kg) Chinese cabbage
  • 1 tbsp ground chili pepper (can be less)
  • 4-5 cloves of garlic
  • slice (2 cm) fresh ginger root
  • 1 tsp ground coriander
  • 1 tbsp vegetable oil
  • 1 tsp sugar
  • 4-5 tbsp. salt
  • 1.5–2 liters of water
  • sesame seeds for sprinkling


Cooking
  1. Cut cabbage lengthwise into 4 pieces and put into a suitable container. Boil some water, dissolve the salt and already cooled brine pour the cabbage. Cover with a plate so that the cabbage was completely in the brine and leave for 12 hours (prefer overnight) at room temperature.
  2. Prepare the dressing for the cabbage, mix pressed garlic, grated ginger root, coriander, sugar and chilli to make a thick paste. You can add a pinch of salt. The number of peppers vary, because the case is purely personal: someone who likes witty, and someone and pinch — searing horror.

  3. Salted cabbage rinse, then let drain, cut up squares and mix with dressing. Place in container, cover with a lid and leave to ferment at room temperature for 1-2 days. After that cabbage for storage can be moved to the refrigerator.
  4. Bring a snack, watering the vegetable oil and sprinkled with sesame seeds.


Cabbage contains a special useful substance — lysine, which has the ability to purify the blood, boost immunity and even to defeat cancer cells. Koreans believe that kimchi promotes resorption of subcutaneous fat, normalizes digestion and helps to absorb food.





And this Eastern appetizer is a great cough remedy, because, as you know, fermented vegetables contain more vitamin C than usual. Ginger and garlic also do their healing thing!
