Boar knee in Czech: worth a try again, to love forever! For true connoisseurs of meat.

Ingredients
  • 1 pork knuckle (leg, shank)
  • 1 liter of dark beer
  • 5 peas allspice
  • 1 head of garlic
  • 5 buds cloves
  • 2 tbsp. honey
  • 3 tbsp mustard
  • 2 Bay leaves
  • 2 bulbs
  • salt and pepper to taste


Cooking
  1. In a prepared pork shank (cleaned, washed and dried) make the punctures on the whole surface and pound it with garlic.
  2. Onion cut into half rings and place in a deep container. There also send the knuckle, peppercorns, Bay leaf and cloves. Pour meat 500 ml of beer and leave it in the fridge to marinate at least 4 hours. Periodically turn the shank to evenly soaked in the marinade.
  3. When the meat is properly marinated, take it out and let a little fluid drain out.
  4. Mix honey with mustard, salt and pepper to taste and RUB the mixture in the knuckle. Leave the meat for 15 minutes.
  5. Put the pork knuckle into a roasting container, pour the remaining beer. Cover with foil and bake 1 hour at 200 degrees, then turn the shanks and bake on under foil for another hour and a half.
  6. After this period, completely remove the foil and cook the meat another 30 minutes to form a beautiful dark brown.






Look out neighbors: they will certainly try to get the smell. Boar knee is usually served with vegetable salad, fresh or pickled cucumbers, braised with apples, cabbage and, of course, beer!
