Healing properties of amaranth known since ancient times. The indigenous people of South America consume amaranth as food and as medicine for over 8 thousand years. Before the era of the reign of Peter I people cooked amaranth grain, the use of which in food has greatly reduced the risk of many diseases.

Amaranth grain Banana bread with amaranth
For this recipe the bread will be more "wet" and heavy, does not contain sugar.
Composition:
- 1 Cup amaranth flakes
- 2 large eggs
- 3 ripe large banana
- 3 tablespoons vegetable oil
- 1\2 Cup shelled walnuts
- Spices (cinnamon, ginger, nutmeg) to taste.
Lightly whisk the eggs, mash with a spoon or whisk using a blender bananas until smooth, mix beaten eggs, bananas and cereal in a bowl, add the nuts. (the dough should be viscous) and put into the form. Bake at 180 degrees on the middle shelf for 30-40 minutes, readiness check toothpick.
Banana bread with amaranth

Composition:
- 100 grams of wheat flour
- 100 grams of amaranth flour
- 100 grams of vegetable oil
- 50 grams of sugar
- 2 eggs
- 3 bananas (crushed)
- 50 grams nuts
Baking powder/soda, vanilla (vanilla essence or extract), spices to taste.
Mix in a container the flour, baking powder, vanilla and spices, whip the eggs separately with sugar. Beaten eggs add the flour, pour in vegetable (olive) oil, stir and add bananas. The dough should be thick and rather compact, and if you want to add a bit extra flour, mix in nuts and spread mass into shape. Bake at 180 degrees for about 35-40 minutes. When banana bread is browned, check the readiness with a toothpick.
Amaranth bread with spelt- 100 g of amaranth, crushed
- 300 ml water
- 1 stick of yeast
- 1 tbsp honey
- 300 ml warm milk
- 375 spelt fine flour
- 150 g amaranth flour is very finely ground
- 1 tsp sea salt
- 1 tbsp vegetable oil
Per serving: approx. 130 kcal, 3 g fat, 21 g carbohydrates, 5 g protein.
Crushed amaranth bring to a boil in water. Reduce the heat and simmer for about 20 minutes. At the lowest stage leave to swell for another 10 minutes.
Meanwhile, dissolve the yeast and honey in half of the milk and leave for 10 minutes.
Mix spelt (spelt) and amaranth flour in the bowl.
Add the yeast mixture, crushed amaranth, remaining milk, sea salt and vegetable oil.
Knead plastic dough. If necessary, add more spelt flour. Set aside to rise for 15-20 minutes.
Put the dough in a greased form and leave to rise for another 15-20 minutes. Bake at 180 degrees for about 35-40 minutes.
