Cascia longevity: amaranth with vegetables — recipe of the month

Amaranth — "Golden grain of God", whatever he's called. Porridge is considered to be longevity. Earlier it was banned by Peter the great, whereas in Chinese medicine it was considered anti-aging. The Aztecs recognized him as the bread of the ancient Greeks ― a symbol of immortality (inflorescence plants never fade).

Amaranth grain contains 16% protein, pectins, micro - and macroelements, have antitumor action. The lysine content of protein of amaranth twice the protein of wheat. Basis fat are unsaturated fatty acids (oleic, linoleic, linolenic). Unlike wheat does not contain gluten, so is suitable for people having allergies.





The composition of the amaranth seeds:

  • about 6% fat, including unsaturated fatty acids;
  • antioxidant squalene;
  • about 60% carbohydrates – starch increased swelling;

  • dietary fiber and pectin;
  • a small amount of gluten.
Due to the unique amino acid composition, presence of polyunsaturated fatty acids, vitamin E and squalene, the seed of amaranth is useful:

  • for the normalization of metabolism,
  • to correct hormonal imbalance
  • for the prevention of diseases of the kidneys and the digestive system,
  • for recovery after severe diseases,
  • to cleanse the body of toxins, salts of heavy metals, radionuclides.




Porridge is very nutritious, rich in protein, so packing 500 grams may be enough even for 3 cooking.

For 2 portions take:

  • 200 grams of amaranth grain
  • 4 radishes
  • 2 tomatoes
  • a handful of the endive salad
  • 1/2 tbsp honey
  • salt to taste
Amaranth boil 15 minutes, pre-Gulf water 1 to 1. Drain the water is not necessary, it will be absorbed into the grains. Porridge is supposed to be crumbly. Good peremeshivaem the finished cereal with a fork, add salt and honey.

All the vegetables cut into small squares, mix with porridge in the pot.
