Bruschetta from Jamie Oliver





Ingredients

4 slices of bread
2 bulbs fennel, cut into pieces and fried
A few Basil leaves
1 chili pepper
Lemon juice
Olive oil
Sea salt
Freshly ground black pepper
50 g of Parmesan
125 g mozzarella
1 clove garlic, cut in half

Fry the bread on both sides. Chop the fennel with Basil leaves and most of the chili pepper. Add the lemon juice, olive oil, pinch of pepper, salt and some Parmesan cheese and mix.

Fried slices of bread, RUB with garlic, drizzle with olive oil and sprinkle with a mixture of fennel. On each slice put a quarter of the mozzarella, sprinkle with the remaining grated Parmesan cheese, garnish with chilli and Basil leaves.
