Fast beet caviar
So many people, so many borsch recipes. However, this is not about borscht, but about beets. Even more specifically, about beet caviar. A great snack - to red fish, to herring, in combination with brynza or just that. The very case when beets do not need to be baked or boiled for a long time, but it is enough to rub and extinguish with vegetables.

Beet caviar
1 big beet
1 big carrot
1 large bulb
2 tsp tomato paste
1-2 tbsp vegetable oil
1⁄2 tsp lemon juice
pepper
salt
Beets, carrots and onions rinse and peel. Grate or cut carrots and beets with a thin straw, cut onions with thin feathers. Warm up the pan with vegetable oil, lay out the onions, roast until transparent, add carrots and beets. Cook, stirring all the time, on an average heat of 5 minutes, then add tomato paste, salt, black pepper, pour lemon juice. Cook for another 5-7 minutes. Take it off the fire and cool it down.
Eat it with whatever your soul desires. published
