Delicious soup from young cabbage

All the taste for us in a soup is a combination of sweet perustuvaa cabbage (in any case not digest it, let it remain elastic), the acidity of the tomatoes, and spicy greens, each time different. Today we used tarragon, and how he fit into this dish! So fresh, really spring — it was delicious.

 

And a crust of fresh black bread, but the butter cream with the same tarragon, grains of sea salt and all, complete peace of mind. And without butter and sour cream — quite a lean dish.



Ingredients:

  • ½ Small cabbage cabbage
  • 2 liters of vegetable stock or water
  • 1 carrot
  • 1 stalk celery
  • 1 onion
  • 1 large potato
  • 3 tomatoes
  • 3 tbsp vegetable oil
  • 1 tsp lemon juice (optional)
  • 2 tsp sugar (optional)
  • 2 Bay leaves
  • salt
For flow — sour cream, tarragon, freshly ground black pepper



How to prepare:

Clean the carrots and onions. Carrots grate on a coarse grater, onion finely chopped. On a heated pan in vegetable oil fry onion, add carrots and cook over low heat, stirring occasionally, 5 minutes.

Tomatoes wash, cut in half and grate the cut down to the skin remained. Add the grated tomatoes to the vegetables in the pan and cook for another 5 minutes, salted to taste.

Bring to boil broth or water. Peeled potatoes cut into cubes and put in a pot, cook until soft. Finely shred the cabbage, add to pan and cook for 5 minutes. Then add the browned vegetables, Bay leaf and salt.

Bring to taste with sugar and lemon juice, if needed (depending on the acid of the tomatoes). Cook for another 3-4 minutes. Serve with greens tarragon, sour cream or Greek yogurt.



Spicy oil

  • 100 g butter
  • 2 tbsp minced green tarragon
  • ½ Tsp lemon juice
  • ¼ Tsp sea salt




How to prepare:

Oil leave at room temperature until soft, add finely chopped herbs, lemon juice and salt. Mix well and refrigerate before serving.

If you make the larger sizes, it is possible to freeze and use as needed.

Of course, you can add other herbs, the main thing is to focus on your own taste.
