Cucumber salad 5 unusual and useful recipes

Cucumber salad "Sunomono" sesame

Ingredients:

  • 2 large cucumber;
  • 1 teaspoon coarse salt;
  • 3 tablespoons rice vinegar;
  • ¼ Teaspoon soy sauce;
  • 1 teaspoon of sesame oil;
  • 1 tablespoon sugar or honey;
  • 2 teaspoons of toasted sesame seeds.
 

How to prepare:

Wash and slice the cucumbers. You can slice them into circles, and can, as in the original recipe, to use a special slicer that will transform the cucumbers into green serpentine. Place in a small bowl, sprinkle with salt and leave to rest for 10 minutes.

Remove the cucumbers from the bowl, remove excess moisture, which managed to stand out under the action of salt, and place in a salad bowl.

To prepare salad dressing in a separate container mix the rice vinegar, sugar, soy sauce and sesame oil. Season the salad, mix well, sprinkle with sesame seeds and serve.

 

Cucumber salad with feta and avocado

Ingredients:

  • 1 large cucumber;
  • 3 large avocados;
  • 1 lemon;
  • 80 g feta cheese;
  • 1 tablespoon finely chopped fresh dill;
  • salt and black pepper to taste.
 

How to prepare:

Cut the cucumber and avocado into equal-size pieces, add the juice of one lemon and dill, mix well. Top with crumble feta. If you consider that the salt is not enough (it all depends on saltiness of feta), salt the salad to taste and definitely pepper, preferably freshly ground pepper.

 

Asian cucumber salad with carrots

Ingredients:

  • 2 large cucumber;
  • 3 large carrots;
  • 2 tablespoons rice vinegar;
  • 2 tablespoons lime or lemon juice;
  • 2 tablespoons of honey;
  • 2 teaspoons sesame (or sunflower) oil;
  • 1 teaspoon of salt;
  • 1 teaspoon flakes red pepper spicy;
  • 1 tablespoon chopped cilantro;
  • 1 teaspoon of sesame seeds.
 

How to prepare:

Slice the carrots and cucumbers into thin strips with a special device for slicing vegetables or just thin slices. In a small bowl mix the ingredients for the sauce: rice vinegar, lime juice, honey, sesame oil, salt, hot pepper, cilantro, and sesame seeds.

Season the salad, mix well and put in the refrigerator for about 20 minutes after covering with clingfilm the bowl. Serve it, optionally adding a little more sesame seeds or cilantro.

 

Thai cucumber salad with peanuts

Ingredients:

  • ⅓ Cup rice vinegar;
  • 2 tablespoons of sugar;
  • ½ Teaspoon of sesame oil;
  • ¼ − ½ Teaspoon hot red pepper;
  • ½ Teaspoon of salt;
  • 2 large cucumber;
  • 3 feather green onions;
  • ¼ Cup chopped peanuts.
 

How to prepare:

In a small bowl, mix ingredients for salad dressing: rice vinegar, sugar, sesame oil, red pepper and salt. Leave the mixture for a while to steep.

Wash and slice the cucumbers and onion, chop peanuts, put the ingredients in a bowl and mix. Add the dressing, again mix well and serve.

 

Cucumber salad with strawberries, feta and Basil

Ingredients:

  • 1 tablespoon red wine vinegar;
  • 2 tablespoons of honey;
  • 2 tablespoons fresh orange juice;
  • ⅛ Teaspoon of salt;
  • ½ Teaspoon orange peel;
  • 2 cups of sliced strawberries;
  • 2 cups chopped cucumbers;
  • 3 tablespoons feta;
  • 2 tablespoons finely chopped fresh Basil;
  • orange peel for decoration (optional).
 

How to prepare:

Wash strawberries and cucumbers, cut into same size pieces and place in a bowl. In a separate bowl, mix ingredients for salad dressing: red wine vinegar, honey, orange juice, salt and orange zest.

Pour over cucumbers and strawberries with the dressing and mix well. On top sprinkle with crumbs of feta cheese and chopped fresh Basil leaves. Before serving, salad can be decorated with curls of orange peel.

As you can see, all five recipes are easy to prepare, they do not require any exotic ingredients. If you don't have sesame oil, you can replace it with sunflower or corn. The taste is not as Asian, but the salad will still turn out great.
