How to make candied watermelon peels

Corky watermelon peel, cut into pieces, wash in cold water, dip in sugar syrup and cook until until they are soaked in sugar and become transparent. Then drop them in a sieve. Allow the syrup to drain, and then spread out in a row of plywood sheets.

Air dry at room temperature or in an oven at a temperature of 35-40 degrees C for 12-24 hours. After that, sprinkle brown sugar or granulated sugar, mix well, deselect the surplus sugar, again air dry (no warming up) and place in jars closed with parchment, cellophane or sealed lids.

Use to decorate candied confectionery and as a dessert with tea.
