Cabbage with cumin and apples Ingredients
- 2.5kg cabbage
- 2 sour apples
- 3 tbsp salt
- pinch
- 6 tbsp water
- pinch
- 10 juniper berries
Preparation
- First of all, clean the head of the dirty and rotten upper sheets, and then stick the cabbage with a thin straw.
- Next, add juniper berries, water, cumin and salt to the minted cabbage, then mix everything thoroughly with your hands.
- Then wash and chop the apples with large slices and lay them at the bottom of a container prepared for starter. The bones and skin are not necessary to remove from apples: it is from them that cabbage will receive a sour savory taste.
- Next, we lay the sanitized cabbage on top of the apples, snugly tamping it into a sourdough container.
- When you fill the jar with cabbage up to half, lay out another layer of apples so that the juice from them is evenly distributed. Next, sprinkle the apples with cabbage again and tamp everything as tightly as possible. At the end, we press the cabbage with a small load and leave it for three days.
