Amazing recipe - beets and carrots baked with spicy herbs

Because of the lack of time, our recipes have recently tended toward linear simplicity. A couple of preparatory movements - and then everything is prepared by itself. And if the dish is also universal - both hot and cold delicious, then this is definitely our choice.
Baked beets with carrots, sprinkled with olive oil, sprinkled with spicy herbs, although it seems too simple, but in fact it is not – it is tasty, aromatic, bright and useful at the same time.
Root vegetables baked with spicy herbs
6 small beets
6 medium-sized carrots
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp. mixtures of dry spicy herbs (thyme, thyme, red pepper flakes or any other set to taste)
salt (preferably large)
for serving - greens and brine cheese or brine
Heat the oven to 180 degrees.
Peel the beets and carrots. Cut beets in slices, carrots in pieces of about the same size.
In two different bowls, fold sliced beets and carrots, sprinkle with herbs, sprinkle with olive oil.
Pour balsamic vinegar into the beets. Stir the vegetables in both bowls.
(You can do it all in one, but then the beets will color the carrots more)
Coil the bowl with foil, spread it in one layer of beets and put it baked for 15 minutes. Then add the carrots, sprinkle the vegetables with salt and bake for another 45 minutes, reducing the temperature slightly and stirring occasionally.
If the beet is young, then this time is quite enough, but you need to check its readiness with a wooden sword.
Cover with foil when cooking is not necessary, some moisture from vegetables will evaporate and they will be slightly soft, which will add to them sweetness and brightness of taste. To emphasize it, you can spray lemon juice and add literally a drop of finely grated peel, although this is not necessary.
Serve ready vegetables hot or cold. We like to sprinkle with crumbled cheese (suluguni or brynza) and fresh greens. published
