Recipes with apples from the classics of Russian literature

Apple jam with lemon and vanilla

We will need:
  • apples – 1 kg
  • sugar – 1 kg
  • lemon – 1 PC.
  • vanilla – 1 pod
How to prepare:
  • Apples are cleaned from skin and seeds, cut into large chunks and add sugar. Leave for 8-10 hours.
  • Bring the consistency to a boil and keep on low heat for 5-10 minutes. Again leave it for 8-10 hours.
  • On a coarse grater grate the lemon zest: remove white veins, remove seeds, finely chop and add to the apples. Bring to a boil again and keep on low heat for 5-10 minutes.
  • Cut the vanilla pod, remove the seeds and add them to the apples.
  • In the final time, leave the apples for 8-10 hours, then bring to a boil, cook on weak fire to readiness. Pour in sterilized jars, allow to cool and put it into the cellar.

We will need:
  • eggs – 2 PCs.
  • butter – 1 pack
  • sugar – 1.5 cups
  • sour cream – 200 g (used to use Mayo, but now possible and necessary to limit natural yoghurt)
  • soda, slaked vinegar – 1 tsp (or 1 tsp baking powder)
  • flour – 4-5 glasses of
  • apples – 5-6 pieces
  • powdered sugar to taste
  • ground cinnamon to taste
How to prepare:
  • Whisk eggs together with sugar and cinnamon (2-3 minutes). Melt butter. Sift flour and add to it whipped with sugar eggs, cooled butter and slaked vinegar soda. Mix everything.
  • The resulting shortbread dough and divide it in two unequal parts. Less remove in the cold for 20-30 minutes and roll out on a large oiled baking pan.
  • Apples are cleaned, cut into large slices, put on the dough, sprinkle icing sugar and grated on a grater chilled dough.
  • Bake 15-20 minutes in a preheated 200 degrees Celsius oven.

We will need:
  • apples – 1 kg
  • sugar – 150 g
  • raisins – 10-15 pieces
  • water – 2 l
How to prepare:
  • Cider apples is better to choose a ripe and sour (and certainly one variety). Before cooking the fruit should be kept in a warm place for 7-10 days.
  • Thoroughly wash the apples. Clearing the fruit from the core, cut into small pieces. Pour in a container of 10 liters and download on top of the sugar (150 g on 1 kg of apples).
  • Pour two liters of cooled boiled water, add 10-15 berries raisins, then cover with water slide. Leave on for three weeks. At the end of fermentation the cider strain, pour into bottles and tightly cap.
  • Store the Apple cider in a cool place. published
