Hachapuri recipe with cheese filling

I have bought these delicious cakes in Georgian bakeries. I finally decided to make it myself for the whole family. After trying a few recipes, I stopped there. I hope it suits you, too.

Khachapuri with cheese on kefir It is this khachapuri I tortured my baker friend. He experimented with original Georgian recipes and found the perfect formula for himself.





The dough is prepared on the basis of kefir, thanks to which baking retains its freshness for a long time. This principle is used in many recipes that you can find on our website.





The ingredients
  • 130ml kefir
  • 150ml sour cream
  • 400g flour
  • 1 tbsp sugar
  • 130g butter
  • 400g brynx
  • salt
  • soda


Preparation
  1. Mix 130 ml of kefir and 130 ml of sour cream. You can use matzons instead, but you can’t always find them in stores. To these ingredients add half a teaspoon of salt and soda, as well as a tablespoon of sugar.



  2. Melt butter in a steam bath and add to the mixture. Stir it well and start adding some flour.



  3. Mix the soft dough. It shouldn't stick to your hands.
  4. Time to cook the stuffing. To do this, rub the brynza on a large grater, add a little sour cream and butter to it. Instead of brynza, you can use a mixture of different cheeses at your discretion. You can take Adyghe in half with suluguni or mozzarella.



  5. The dough is divided into 4 parts. Form small flatbreads, in the center of each lay a quarter of the filling.



  6. Collect the edges of the cake on top so that you make a bag. Now each blank must be carefully rolled with a roller. Do not make the cakes too thin.



  7. Lazy khachapuri with cheese on kefir fry in a dry pan without oil. The first side must be fried under the lid, and after turning the lid must be removed.



  8. Immediately after frying, grease the cakes with butter. Bon appetit!
