Why add poppy to the cake

Lemon is a wonderful ingredient for baking, although quite capricious. A cake with lemon is difficult to cook, because the juice dough gets soaked.





The cake that we will talk about today will consist of biscuit, kurd, cream and impregnation. Kurd is a custard based on lemon juice. Today you will learn how to cook it.





Biscuit ingredients
  • 5 chicken eggs
  • 140g sugar
  • 10g vanillin
  • 40g flour
  • 15g cornstarch
  • 30g poppy
  • 2 tsp lemon peel


Ingredients for the Kurds
  • 90g lemon juice
  • 30g lime or orange juice
  • 75g sugar
  • 75g oil
  • 110g yolks
  • 1 tsp starch


Cream ingredients
  • 100g powdered sugar
  • 500g cream cheese
  • 150g cream
  • 50g orange or lemon jam


Impregnation ingredients
  • 40g lime juice
  • 60g sugar


Preparation
  1. Cooking should begin with a biscuit. Separate the yolks of 5 eggs from the proteins and place them in different containers. To the yolks add 70 g of sugar and 10 g of vanillin. Beat the ingredients with a blender. 70 g of sugar powder and beat with proteins. Mix the whipped yolks with the squirrels with a spatula.



  2. Ask for flour with starch, add 30g of poppy and 2 tsp of lemon peel. Mix the dry mixture with the egg. Mix the dough and pour it into a mold covered with parchment. Bake for 40 minutes at 170 degrees. After baking, the biscuit must be cooled and sent overnight to the refrigerator.



  3. Time to cook the Kurd. Pour the juice into a thick-bottomed saucer, add sugar and yolks. Mix the components to a uniform mass. Add 75g of butter.
  4. Prepare the Kurd on medium fire, stirring constantly. A few minutes will suffice. Remove the finished cream from the fire, pour into a glass container and hide in the refrigerator for a couple of hours.



  5. Beat the oil at room temperature with the sugar until white. In the bowl of the blender gradually start adding cream cheese, and then 150 g of cream. At the very end, you can add a couple of spoons of jam if you want.



  6. The impregnation is prepared very quickly: you need to mix the juice with sugar, and then bring the mixture to a boil.
  7. It's time to build our masterpiece. Cut the biscuit into three pieces. Apply impregnation on the first lower part with a brush. Apply the cheese cream with a thin layer on top, making a low curb on the edge. Now fill the middle with a Kurd.



  8. Cover everything with the second piece of biscuit and repeat the previous step. Put the last piece of biscuit on top. Grease it with residual cream. Bon appetit!





Lemon peel cake will definitely be the main decoration of the festive table, especially with sprigs of mint and candied pieces of lemon on top.
