  • 3 eggs
  • 250g sugar
  • 1 tsp soda
  • 650-700g flour

  • 2 yolks
  • 100g sugar
  • 70g butter
  • peel 1 lemon
  • 10g gelatin
  • 150g powdered sugar
  • 500ml cream
  • serving


Preparation
  1. For test-making You need to prepare a pot of water and a bowl for a steam bath. Put eggs in the bowl, add honey, sugar, butter and a pinch of salt. Put the bowl on the water bath. Keep the dough in a water bath until the sugar grains dissolve. Don't forget to stir constantly. When the sugar dissolves, remove the dough from the fire. Cool off.





  2. While the dough is cooling, you can prepare the cream. For custard Pour milk into a pan or pan, add yolks, sugar and starch. Boil the cream in the pan until thickened, stirring constantly. When the cream begins to fold - reduce the fire and hold the cream on the stove for another 3 minutes. In the hot cream add butter and peel of lemon or orange.

    If there are lumps in the cream, do not worry, they can be broken with a blender. So that the cream does not wind up while the dough is baked, it must be covered with food film.





  3. In the cooled dough in several approaches add flour. Put a little flour on the table, put the dough on the flour and stir it with your hands. If there is little torment, it can be added. The dough should not stick to the hands. Wrap the dough in food film and put it in the refrigerator.



  4. Gelatin dissolve in water, and then heat it in a water bath or microwave. Put a couple of tablespoons of cream on the gelatin. Stir, and then pour gelatin to the main mass of the cream. Stir the mixer.



  5. Whip the cream until it foams. Then add powdered sugar to them. Whip to thicken. While whipping cream add custard. Take a few more minutes. Put the cream in the fridge for 1.5 hours.



  6. Divide the dough in half. Roll the dough on parchment, the thickness of the rolled dough should be about 0.5 cm. Draw in advance on a separate sheet of parchment the shape of the heart and cut it out. It'll be a pattern. Put this template on the teso and carefully cut the dough into the shape. Add trimmings to the second part of the test.

    Make frequent punctures on the test with a fork. By the same principle, make 2 more crusts. We should end up with 3 boxes. Bake cakes at 180 degrees for 7-10 minutes until ready.





  7. With a knife, carefully separate the finished cakes from the parchment. Put the first cake on a plate or board where you will collect the cake. Transfer the cream into a confectionary bag, and then with the help of a bag sit on the cake the same drops of cream around the perimeter of the finished dough. Do that to all the crusts.



  8. Decorate the top of the cake fruit. You can also supplement the cake with live flowers or candy. Bon appetit!
