Preparation
  1. Wash the rice and fill it with water. Bring the water to a boil and cover a pot of rice with a lid, keep the rice on low heat. Let the rice brew for 12 minutes.
  2. Prepare a rice dressing: mix rice vinegar, sugar and salt. Stir everything well.



  3. Prepare the red fish. You can use trout or salmon. Make sure there are no bones in the fish and cut it into thin plates. To make the fish easier to cut, leave it in the freezer for 30 minutes.



  4. Pour the rice with vinegar and stir it neatly with a spatula. Then cover a pot of rice and leave it in a cool place for 2 hours.
  5. When the rice is cold, put the cream cheese in a pastry bag. Cut the cucumber with thin long stripes, and do not use the middle with seeds.



  6. Ripe avocado cut a thin straw and prepare the mat for roll assembly. To make the sushi mat reusable, it is better to wrap it in food film. Nori sheets should be cut in half.
  7. Lay nori on the mat, and on top a thin layer of rice so that it does not fill the first 2 cm of nori. With the free edge of the mat, level the rice edge. To make it easier to work, wet your hands in water.



  8. Turn the nori leaf with rice over to the other side and squeeze two strips of cream cheese from the pastry leaf.
  9. Put avocado, cucumber and tobiko caviar on top as desired. Twist the roll with a mat, fasten the sides of the roll well.
  10. When all the rolls are collected, lay out the red fish on top and press the roll with a mat. Done.
