Recently, more and more people refuse to eat meat. Some due to individual intolerance, others for ethical reasons or in fashion. Naturally, the market responds to increased demand by offering a variety of products for vegans and vegetarians. Vegetarian sausage is not uncommon in stores.



But customer reviews are a little alarming. According to them, this sausage resembles a cheap doctoral, but when heated in the microwave turns into a sticky puddle. Let us leave on the conscience of the manufacturer the composition of ingredients. But, apparently, without chemical thickeners, the matter was not done here. For those who for some reason do not eat meat and at the same time would not like to tempt fate, we offer two proven recipes of homemade sausages from the most affordable products.

Vegetarian sausage

At its core, vegetarian sausage from this recipe has not meat, but protein-rich legumes. It can be lentils, peas or beans. Due to the addition of beet juice, gelatin and a variety of spices, it is similar to ordinary boiled and will help diversify the menu for those who eat exclusively plant foods.



By the way, lentils are the record holder for folic acid content. It replenishes iron reserves in the body and improves digestion of fiber. And yet it contains almost no fat.

The ingredients
  • 2 tbsp. lentils (choose a variety to taste)
  • 3 tbsp beet juice for colour
  • 6 cloves of garlic
  • 100 ml of vegetable oil
  • 14g gelatin
  • 2 tsp salt
  • 2 tbsp hop-suneli
  • 1 pinch of black pepper


Preparation
  1. Pour the lentils into the pan and pour 4 tbsp of water. Cook until ready, about 30 minutes. Pour the water.
  2. Mix beet juice, garlic and spices in a blender. In the resulting mixture add hot boiled lentils, dry gelatin and vegetable oil. Again, beat well in the blender until you get a homogeneous mass without lumps.
  3. Take a plastic bottle, cut the top and bottom, set what you got upright on the dish. In the resulting container, pour a mass of a blender and send it to freeze in the refrigerator.


  4. If you do not want to play with the bottle, you can make small sausages from the lentil mass, wrap them with gauze to hold the shape and also send them to the refrigerator.
  5. By the way, from the same lentil mass, you can make a useful and nutritious pate, if it is completely lazy to form sausages. To do this, the lentil blender mixture must be laid in a deep plate or shape, covered with food film and sent to the refrigerator for freezing. It's just as good!


How to make a sausage from wheat

The ingredients
  • 2 tbsp wheat
  • 1 bulb
  • 0.5 beets
  • 3 cloves of garlic
  • 1 tbsp dry basil
  • 1 tbsp ground coriander
  • 0.3 tbsp of odorless vegetable oil
  • 1.5 tsp salt


Preparation
  1. In the evening soak the wheat in boiling water. Water should be 3 times more than wheat. Wrap it up and leave it overnight. In the morning, drain the water and pass the wheat through the meat grinder, using the smallest mesh.
  2. Grate beets on a fine grater. Cut the onions in small pieces.
  3. Add beets, onions, salt, spices, vegetable oil and crushed garlic to the wheat. Stir thoroughly to get a uniform and evenly colored mass.
  4. Divide the resulting mass into 4 equal parts.
  5. Using the usual food film, form 4 sausages. Tightly twist them into the film, preventing air from entering between the film and the sausage mass. Tie the edges of the film and send the sausages into boiling water for 40 minutes.


  6. Let the sausages cool, take off the film and cut them into pieces.


  7. Serve to the table with greens and favorite sauces.
