How to cook a juicy duck Ingredients

- 115g freshly squeezed orange juice
- 100g soy sauce
- 30g grated ginger
- 2 tbsp marinade honey
- 1 tbsp orange peel
- 2 tsp dried garlic
- 1/2 tsp black pepper
- 1 tbsp filling honey
- 1/4 tsp cinnamon

- 10–12 tbsp of duck juice and fat
- 170g freshly squeezed orange juice
- pulp 1 orange
- 1-2 tsp starch
- 1-2 tbsp honey
- 1 tbsp lemon juice
- 50 ml of water
- 1 chip. cinnamon
Preparation
- The duck is gutted, thoroughly washed, clean from feathers and be sure to cut off the sebaceous glands located on the tail, otherwise the bird can exude an unpleasant smell even after cooking.
- In a separate vessel, mix soy sauce, orange juice, ginger, orange peel and honey. Stir the marinade until the honey dissolves.
- Fill the duck with a finished marinade, cover the container with food film and send it to the refrigerator for 24 hours. Keep in mind that from time to time it is necessary to turn the bird in the dish so that the meat is marinated evenly.
- 1 peel the apple from the middle, cut with rings and lay on a bowl, previously covered with foil. Mix the garlic with ground black pepper and thoroughly rub the bird carcass with the mixture, taking it out of the marinade.
- Cut the remaining apples into 4 parts, sprinkle with cinnamon, add 1 tbsp of honey and mix thoroughly. Push inside the duck fragrant apples, close the hole with a bamboo sword or toothpicks, cover the top with foil. Send the bird in an oven heated to 180 degrees for 1.5 hours.
- Take the duck out of the oven, remove the foil, and the juice and fat obtained during the baking of the bird, carefully collect in a separate bowl (enough 10-12 tbsp). Wrap the duck again with foil and send it into the oven for another 30 minutes.
- While the bird is baked, prepare the sauce: pour duck fat into the saucer, add orange and lemon juice, cinnamon, honey, mix well and bring the mixture to a boil. Mix the starch with water and add it to the sauce. Stir, bring the liquid to a boil. If the sauce is too liquid, add a little more starch diluted with water.
- Add the orange pulp to the boiling sauce, bring it to a boil again and remove it from the fire. The sauce should turn out sour and sweet, if there is not enough sweetness - add honey or sugar, acid - lemon juice.
- Get the duck out of the oven, take off the foil, pour the bird with fat and juice. Wings, legs and tail wrap foil so that they do not burn. Bake for another 20 minutes to the blush crust.
- Check the readiness of the duck with a toothpick: if light juice leaks, then the bird is ready. Cover the duck with foil and leave for 15 minutes to "rest."
- Put the finished bird on a dish, decorate with oranges and quickly serve it to the table with a special sauce. Bon appetit!
